2.Combine potatoes and half the oil in a baking dish. Season to taste. Bake for 30-35 minutes until golden brown.
3.Meanwhile, heat remaining oil in a large saucepan on high. Saute onion, celery, garlic and chilli for 3-4 minutes until onion is tender. Stir in wine. Bring to boil. Reduce heat and simmer for 3-4 minutes until reduced by half.
4.Blend in tomatoes, beans, bay leaves and rosemary. Return to boil. Reduce heat and simmer for 15-20 minutes until sauce thickens. Stir parsley through.
5.Serve wedges topped with spicy beans and sour cream (omit for vegans), if desired. Accompany with side salad, if liked.
If preferred, use a combination of pumpkin and potato when making wedges.
