Method
1.Break vermicelli into a large heatproof bowl. Cover with boiling water. Set aside for 5 minutes until tender. Drain well. Place in a serving bowl to cool.
2.In a jug, whisk together all dressing ingredients. Set aside.
3.Add trout, cucumber, carrot, radish and herbs to noodles. Toss dressing through. Sprinkle with nuts to serve.
Shredded barbecue chicken (instead of trout) is also delicious in this dish.
