Seafood kebabs

These kebabs are a great party food. Simply serve with cocktails for a great evening!

Method

1.Place 12 bamboo skewers in water to soak. Mix together olive oil, garlic, lemon rind, chilli and sea salt. Place prawns and scallops in a shallow bowl and pour over the oil mixture. Refrigerate for 1 hour.
2.Thread a piece of bacon onto a skewer followed by a prawn, scallop, bacon, prawn and then bacon. Continue with remaining skewers until you have used up ingredients and skewers.
3.Cook kebabs for 1 to 2 minutes each side on a hot barbecue or griddle.
