1.Heat oil in a frying pan on high. Cook fennel, 6 minutes, stirring, until soft and golden. Reduce heat to low. Stir in rind and cook, 8 minutes, covered, until tender. Season to taste.
2.Meanwhile, place lemon slices and onion in a microwave-safe dish. Top with salmon. Season with salt and pepper. Cover and microwave on high (1200 watts/100%), 5 minutes, or steam, until cooked.
3.Spoon braised fennel, then onion from salmon dish onto serving plates. Top with salmon and sprinkle with reserved fronds. Serve with lemon wedges, if you like.
