Method
1.In a jug, whisk olive oil, lemon juice and Dijon mustard together. Season.
2.In a serving bowl, toss prawns with tails on, cooked, cooled short pasta of choice, roma truss tomatoes, avocado, rocket and green onions.Toss through half dressing. Serve with remaining dressing.
To give added flavour and texture, toss in a handful of Ligurian (mini black) olives.
