1.Heat oil in a wok over moderately high heat. Stir-fry garlic and chilli, for 20-30 seconds or until fragrant. Add cabbage and carrot; stir-fry for 1-2 minutes or until veggies are soft.
2.Add rice; stir-fry for 2 minutes or until heated through. Add sauces; toss to combine. Remove from heat; add onion.
3.Meanwhile, heat a small non-stick frying pan over moderate heat. Pan-fry eggs, in batches, until cooked as you like. Spoon rice into serving bowls; top with egg, shallots and extra chilli. Serve at once.
Budget tip: Great recipe for leftover rice. Add shredded chicken or pork. Fried shallots are sold in supermarkets and Asian grocery stores. You will need to cook about 1 cup rice.
