Parmesan croutons
Method
1.To make parmesan croutons, preheat oven to 190°C (170°C fan-forced). Spray a large baking tray with oil. Arrange bread, in a single layer, on prepared tray. Spray with oil and sprinkle with parmesan; bake 10 minutes, or until crisp and golden brown.
2.Meanwhile, heat oil in a large saucepan over moderately low heat. Add onion, carrot and celery; cook, stirring, 12-15 minutes, or until soft. Add garlic; cook, stirring, 1 minute, or until fragrant.
3.Add tomato and stock. Cover; bring to the boil. Reduce heat. Simmer, partially covered, 15 minutes. Add pasta; cook, uncovered, 5 minutes.
4.Add green beans; cook 5 minutes. Stir in borlotti beans and silverbeet; cook 2-3 minutes, or until silverbeet is just wilted.
5.Ladle soup into serving bowls. Top with parmesan croutons. Serve.
You can use dried beans instead of borlotti beans; soak in cold water overnight. The cooking time will vary.
