If you love a cheese platter, this gherkin relish is the perfect addition! This recipe will fill three 440ml jars so this could also make a great gift to friends and family.
Serve with all of your favourite cheeses, charcuterie and fruits – we’re also big fans of adding this to a classic ploughman’s lunch.
If you love a relish or pickle, try making your own pickled onions too – they’re surprisingly easy and become another great addition to your cheese platter!
Ingredients
Method
In a food processor mince the gherkins and onions. Mix together with the cucumber and salt in a large bowl. Leave to sit overnight.
Drain the excess liquid out of the bowl. Place the gherkin mixture in a large pot with the sugar and ¾ of the vinegar and bring to the boil.
Mix the flour, mustard, curry powder and the rest of the vinegar in a small bowl. Pour this mixture into the pot and cook for 20 minutes, stirring frequently. Pour into sterilised jars and seal.
