Pāua fritters

As kids, we were spoiled with these! Friends of Mum and Dad always used to drop off pāua and now I crave them, so I love getting my hands on some when I can. I have changed my usual recipe a little, with inspiration from my chef brother, by adding some herbs and zest. These are fantastic!

Paua fritters

1.Place all the ingredients in a bowl and mix to combine into a smooth batter. Season with salt and pepper.
2.When ready to cook, heat a fry pan or barbecue plate. Add oil to pan, then dollop on spoonfuls of mixture and cook until golden brown on both sides.
3.Ensure fritters are cooked all the way through – there’s nothing worse than a gooey fritter!
4.Serve with wedges of lemon or my dad’s favourite, Worcestershire sauce.
