Method
1.Cook pasta in a large saucepan of boiling, salted water according to packet directions. Drain, return to saucepan. Cover and keep warm.
2.Meanwhile, heat half the oil in a large frying pan on high. Saute green onions and zucchini for 5 minutes, until soft and golden. Add garlic and cook for another minute.
3.Stir in lemon rind and juice, tomatoes and remaining oil. Season to taste. Add mixture to pasta and toss for 1 minute on high. Serve and sprinkle with parmesan.
Not suitable to freeze.
