1.Combine oil, lemon juice, lemon rind and herbs in a bowl. Season to taste. Add prawns and toss to coat. Cover and refrigerate for 1 hour.
2.Preheat a barbecue on low. Thread prawns carefully onto metal skewers, reserving marinade. Cook for 3-4 minutes each side, brushing frequently with reserved marinade. Serve with lemon wedges.
Cooking prawns in their shells both protects the delicate flesh and imparts a delicious smoky flavour. If using wooden skewers, don’t forget to pre-soak them to avoid burning while cooking.
