1.In a large bowl, combine lamb mince, red onion, parsley and mint, egg, cumin, garlic, chilli and lemon. Roll into about eight small sausage shapes (about 10cm long). Mould around skewers and chill for 10 minutes.
2.To make tabouli, combine couscous and 1/2 cup boiling water in a bowl. Set aside, covered for 5 minutes. Fluff up grains using a fork. Add cherry tomatoes, parsley, mint leaves, red onion, olive oil, and juice. Toss well.
3.Heat oil in a large frying pan on high. Cook kebabs in two batches for 6-8 minutes, turning occasionally until cooked through. Serve on tabouli.
