Ingredients

Method

1.Heat 1 tablespoon of oil in a deep frying pan or saucepan on high.
2.Cook chicken, in batches, 3 minutes each batch, or until just browned. Remove from pan and set aside.
3.Cook cauliflower in same pan 7 minutes, or until golden. Remove from pan.
4.Heat remaining oil in pan; cook onion 3 minutes, or until soft. Add cumin and rice; cook 2 minutes, stirring constantly, or until rice is translucent.
5.Stir in stock, peas and chicken; season to taste. Top with cauliflower and bring to the boil.
6.Cover and reduce heat to low; simmer 15 minutes, until water is absorbed and rice is cooked. Serve.
