1.Heat a large non-stick frying pan on high. Spray both sides of salmon with olive oil (or heat 1 tablespoon oil in the pan).
2.Add salmon, skin side down; cook 2-3 minutes, until crisp. Turn; cook a further 1-2 minutes for medium, or until cooked to your liking.
3.Meanwhile, in a small bowl, combine soy, sugar and ginger. Stir until sugar dissolves.
4.Heat a wok or frying pan on high. Add 2 tablespoons soy sauce mixture to wok. Stir-fry gai lan 2-3 minutes, until just wilted.
5.Divide gai lan and rice among serving dishes. Top with salmon.
6.Drizzle soy sauce mixture over and sprinkle with sesame seeds to serve.
