Method
1.Place rice stick noodles in a large, heatproof bowl. Cover with boiling water. Set aside for 5 minutes until tender. Drain well. Heat oil in a wok or large flying pan on high.
2.Stir-fry ginger, garlic and chilli for 1 minute. Toss through broccoli and green onions. Stir-fry for a further 1 minute. Add prawns.
3.Stir-fry for 1-2 minutes or until they change colour. Stir through combined sherry and fish sauce. Bring to boil on high. Reduce heat to medium and toss through noodles for 1 minute. Drizzle with soy sauce.
Alternatively, chicken, fish or tofu may be used for this recipe.
