Gazpacho

Method

1.In a large bowl, combine prepared vegetables and garlic. Stir through bread, oil, vinegar, chili and sugar. Cover with water. Season to taste. Mix Well. Cover with plastic wrap and chill for at least 3 hours.
2.Transfer mixture to a food processor or blender with ice cubes, and process until smooth. Strain to remove pieces of skin, pressing well. Pour into serving glasses.
3.Serve topped with a little combined tomato, capsicum, onion and mini croutons.

If liked, use 1/2 a red and 1/2 a green capsicum.
