Method
1.Remove meat from duck, leaving skin on; discard bones. Slice meat into small pieces.
2.Place duck in a large bowl with remaining ingredients; toss well.
3.To make orange dressing, in a small jug, whisk together all ingredients.
4.Drizzle orange dressing over salad; toss well and serve.
Duck is available from specialty Chinese shops – but if you can’t find it, use a barbecued chicken.
