1.Combine water and lentils in a saucepan. Bring to the boil. Reduce heat to low. Simmer 15-20 minutes, until just tender. Drain well.
2.Heat olive oil and butter together in a saucepan. Saute bacon, onion and garlic 2 minutes. Stir in cooked lentils and chicken stock. Simmer 4-5 minutes. Blend in chives and season to taste.
3.Spray a hot pan with oil. Cook 4 salmon fillets for 3-4 minutes, each side, until cooked to taste. Serve with braised lentils, rocket leaves and lemon wedges.
