1.Preheat a char-grill or barbecue plate on medium.
2.Add oil; cook onion 4-5 minutes, stirring frequently, until onion starts to soften and colour (this may also be cooked in a frying pan).
3.Add balsamic vinegar, sugar and thyme; cook over a low heat, stirring, 10 minutes, until onion is very soft. Season to taste. Transfer to a bowl.
4.Cook chipolatas 8-10 minutes, turning, until cooked through. Serve in rolls with onions.
