Method

1.Place chicken slices in a shallow bowl. Combine oil, lemon rind, juice and garlic and pour over chicken slices. Set aside to marinate for 10 minutes.
2.Heat a frying pan on high. Cook chicken for 2 minutes each side, until golden.
3.Spread pesto onto four ciabatta slices, top with sliced tomato, a slice of provolone and a piece of chicken. Cook in a sandwich toaster for 2-3 minutes, until golden. Serve.
