Chicken fajita

This simple chicken fajita recipe is the perfect portion for a light dinner or lunch for one.

Method

1.Mix the oil, paprika and sugar in a bowl along with the lime zest and juice. Place the cubes of chicken into the mixture, coating all the pieces well. Cover and put in the fridge for an hour to marinate.
2.Carefully thread the chicken pieces on to some skewers and grill for 3-4 four minutes on each side, or until the chicken is cooked all the way through (cut a piece open to check).
3.Warm the tortilla wrap in the oven, then place some lettuce and guacamole on top. Push the chicken pieces off the skewers and into the wrap. Drizzle with the yoghurt, roll up and serve.
