Method

1.Heat a wok or large frying pan over moderately high heat. Add oil, swirl to coat surface. Add onion, sauté, 3-4 minutes, or until golden. Spoon in curry paste, cook and stir, 1 minute, or until fragrant.
2.Add chicken, toss, 2-3 minutes, or until chicken is well coated in curry paste. Pour in tomato and water, and add pumpkin. Bring to boil. Reduce heat to low, simmer 10 minutes.
3.Stir in coconut milk, simmer 5-6 minutes, or until pumpkin is tender. Add peas, simmer 2-3 minutes, until tender. Serve curry with rice, yoghurt and pappadums.

You could use kumara (orange sweet potato) instead of pumpkin, if you like.
