Method
1.In a large bowl, combine rocket leaves, croutons, vegetables and olives.
2.Place all dressing ingredients in a food processor or blender. Process until smooth. Season to taste.
3.Drizzle dressing over salad and toss well. Top with fetta and serve with prosciutto and crusty bread.
These vegetables are readily available from most supermarkets in jars or from the deli section.
