1.Preheat oven to 220°C/200°C fan-forced. Line 2 large baking trays with baking paper. Place onion rings and yoghurt in a medium bowl; mix well until onion is coated in yoghurt. Dip in breadcrumbs; place in a single layer on prepared trays. Generously spray rings with oil. Bake 20-25 minutes or until golden brown and crisp.
2.Combine mince, grated onion, carrot, egg white and cornflour in a medium bowl. Shape into 4 patties. Spray patties with oil. Heat a medium frying pan over moderate . Add patties; cook 2-3 minutes each side or until cooked. Transfer to a baking tray; top each patty with a piece of cheese. Bake 2 minutes or until melted and bubbly.
3.Using a 9cm round pastry cutter, cut bread into rounds, then toast. Top half the bread rounds with lettuce, tomato, a patty and barbecue sauce. Top with remaining bread rounds. Serve with onion rings.
