Caper dressing
Method
1.Remove flesh from bug tails. Roughly chop. Place in a large bowl with cos leaves, pawpaw, capsicum and chives.
2.To make caper dressing, whisk all ingredients together in a jug. Season to taste.
3.Drizzle dressing over salad just before serving, tossing gently.
Prawns, lobster, smoked salmon or trout, crab or shredded chicken are also delicious in this salad.
