1.Preheat oven to 200°C.
2.In a large baking dish, toss kumera and eggplant with half the oil. Season to taste. Bake for 15-20 minutes or until kumera is golden and almost tender.
3.Meanwhile, in a large frying pan, heat remaining oil on high. Cook chicken 1-2 minutes each side or until golden.
4.Transfer chicken to dish with vegetables. Spoon combined sauces over and sprinkle with cheese and bacon.
5.Bake 10-15 minutes, until chicken cooks through and cheese melts. Sprinkle with basil to serve.
