Method
1.Blend or process watermelon, mint, juice and 1 cup of the sugar, in batches, until smooth. Strain. Transfer to a large, non-metallic freezer-safe shallow dish. Cover with plastic food wrap. Freeze for 2 hours or until mixture becomes firm around the edges.
2.Using a fork, break mixture, crushing any frozen pieces. Cover; return to freezer for 30 minutes more. Using a fork, break mixture, crushing any frozen pieces. Repeat process 3 more times or until mixture forms small ice crystals when scraped with a fork.
3.Line a large baking tray with baking paper. In a small frying pan, bring 1/2 cup water to boil over high heat. Add lime. Reduce heat to low; simmer 5-6 minutes or until peel is soft.
4.Add remaining sugar; stir until dissolved. Increase heat to high; bring to boil. Boil for 2 minutes or until syrup is golden. Using a slotted spoon, transfer lime slices to prepared tray in a single layer. Cool slightly. Sprinkle with extra sugar.
5.Scrape granita; spoon into chilled serving glasses. Serve topped with lime.
Lemon juice can be used instead of lime in granita.
