Low-fat custard

Method

1.Preheat oven to 180°C. Lightly grease a 20cm square cake pan with spray.
2.Place dates and bicarbonate of soda in a small saucepan. Add water and bring to boil. Stir well. Remove from heat and cool for 10 minutes.
3.Using an electric mixer, beat together butter alternative and sugar until creamy. Add eggs 1 at a time, beating well after each addition. Beat in vanilla.
4.Fold half of flour into butter mixture with half of date miXture. Fold in remaining flour and date mixture.
5.Pour into prepared pan. Bake for 40-45 minutes, until cooked when tested with a skewer.
6.To make Low-Fat Custard, beat eggs with sugar using an electric mixer, until pale. Gradually whisk in milk and vanilla. Transfer to a saucepan. Cook on low, stirring, until thick. Serve with pudding.

Scalded milk is boiled milk that has been removed from heat once it reaches boiling point. For an even lower-fat custard, prepare with custard powder and low-fat milk following packet directions.
