Bacon and cheese hash browns with cherry tomatoes

Perfect for a lazy weekend breakfast or brunch, these delicious bacon and cheese hash browns are amazing served with a fried egg and oven roasted cherry tomatoes.

Method

1.Preheat oven to moderate, 180°C (160°C fan-forced).
2.Boil potatoes in a medium saucepan of water for 10-15 minutes, until tender. Drain well. Transfer to a large bowl. Mash well and cool.
3.Meanwhile, place truss tomatoes on a baking tray. Drizzle with oil. Bake tor 15-20 minutes until they start to collapse.
4.In a medium frying pan, cook bacon and onion for 4-5 minutes, until tender. Stir into mashed potato with cheese and chives. Season to taste. Form into 10 even-sized, flattened patties.
5.Heat half the butter and oil in a medium frying pan on high. Fry 5 patties for 4-5 minutes each side until tender and golden. Drain on paper towel.
6.Repeat with remaining butter, oil and patties. Serve with tomatoes, rocket and fried egg.

For the perfect fried egg, break it into a lightly greased, heavy-based frying pan, heated to medium.
