Walnut cream pikelet stack

These decadent pikelets are perfect for a lazy weekend breakfast. Stacked with sliced banana, crunchy toasted walnuts, and an indulgent chocolate sauce, this dish will delight the whole family.

Ingredients

Method

1.Sift flour into a large bowl. Stir in sugar.
2.In a small bowl, whisk together milk, egg and butter until combined. Make a well in centre of the flour mixture. Gradually blend in milk mixture until smooth.
3.Heat a large non-stick frying pan on medium. Brush with extra melted butter.
4.Drop heaped tablespoonfuls of batter into pan. Cook 1-2 minutes, until bubbles appear on the surface. Turn and cook other side for 1 minute or until golden. Transfer to a wire rack to cool. Repeat with remaining mixture.
5.In a small bowl, using an electric mixer, beat cream until soft peaks form. Beat in icing sugar. Gently fold nuts through.
6.To make chocolate sauce: In a small saucepan, combine all ingredients. Stir over a low heat for 2-3 minutes, until sugar dissolves and mixture is smooth.
7.Layer pikelets with banana slices and cream on serving plates. Serve drizzled with sauce and sprinkled with extra nuts.
