Hearty, delicious and easy combination fried rice recipe. Feel free to use leftovers or a mix of whatever meat you have on hand. For the best results cook 1 cup of rice a day ahead.
1.Heat a wok or large trying pan over high heat. Add 2 tablespoons oil; swirl to coat. Add garlic, ginger, mince and bacon; stir-fry, breaking up lumps,for 3-4 minutes or until well browned.
2.Add carrot and capsicum; stir-fry for 2-3 minutes. Add rice, prawns, pea mix and soy sauce; stir-fry for 2-3 minutes. Remove from heat; add sprouts. Toss to combine; season with salt. Spoon into bowls.
3.Meanwhile, heat remaining oil in a large non-stick frying pan over moderate heat. Cook eggs for 1-2 minutes. Top rice with eggs and serve at once.
For best results,cook rice (you’ll need 1 cup) a day ahead.
