Method

1.Combine mushroom, green onion, sweet chilli sauce and garlic and chilli paste in a bowl. Place a heaped teaspoon of mushroom mixture onto centre of each gow gee wrapper. Brush edges with a little water, fold over filling and crimp to press edges together and seal.
2.Heat stock and 3 cups water in a large saucepan with ginger, garlic and soy sauce on medium. Simmer for 10 minutes. Add gow gee and choy sum and simmer for 5 minutes. Ladle gow gee and broth into bowls to serve.
