This tofu and vegie burger recipe is a great stand-by for nights when you want or need to produce a vegetarian meal. They're packed with protein and totally yum.
1.Pat tofu dry with paper towel. Spread in single layer on paper-towel-lined tray; cover tofu with more paper, stand for 20 minutes.
2.Meanwhile, in a medium frying pan heat oil over medium heat; cook onion and garlic, stirring, for about 1-3 minutes, or until onion is soft. Add spices; cook, stirring, for about 1-2 minutes, or until fragrant.
3.In a large bowl, combine onion mixture with tofu, zucchini and breadcrumbs; shape into four patties. Cover; refrigerate for 30 minutes.
4.Meanwhile, combine hummus and yoghurt in a small bowl.
5.Cut bread into four pieces. Split each piece in half horizontally; toast cut sides in heated oiled grill pan (or grill or barbecue).
6.Cook patties in the same pan for about 5 minutes, or until browned both sides and hot.
7.Spread bread with hummus mixture; sandwich combined herbs and onion, patties and sprouts between bread slices. Serve immediately.
