Method
1.Preheat oven to very hot, 220°C. Line 2 oven trays with baking paper.
2.Using an 8cm cutter, cut 4 rounds from each pizza base. Place on trays. Spread with sauce and sprinkle evenly with mozzarella. Place a mushroom on each, trimming base to stand upright.
3.Bake 10-15 minutes, until bases are golden and cheese melts. Meanwhile, separate enoki (or shimeji) mushrooms into small bunches of 5cm lengths. Top cooked pizzas with mushrooms and sprinkle with parsley for grass.
