Ingredients
2 teaspoon olive oil
350 gram beef fillet, trimmed
1 bunch mint, leaves picked
1 bunch coriander, leaves picked
1/2 bunch basil, leaves picked
1 cup snow-pea sprouts
250 gram cherry tomatoes, halved
1 lebanese cucumber, halved lengthwise, sliced
1 red onion, thinly sliced
lime cheeks, to serve
Dressing
1/3 cup sweet chilli sauce
1 lime, zest finely grated and juiced
1 tablespoon fish sauce
1 clove garlic, crushed
Method
1. Heat oil in a large frying pan on high. Cook beef 3-4 minutes each side, until cooked to taste. Set aside and cover to keep warm.
2. To make dressing, whisk together in a jug, sweet chilli sauce, lime zest and juice, fish sauce and garlic. Set aside.
3. In a large bowl, combine herbs, sprouts, tomatoes, cucumber and onion.
4. Slice beef thinly. Arrange over salad and drizzle with dressing just before serving.
