Method
1.Preheat oven to moderate, 180°C. Spray a frying pan with olive oil and heat on high. Saute‚ spinach and onion for 4-5 minutes until spinach wilts. Transfer to a bowl and allow to cool slightly.
2.Blend in the ricotta, egg, feta, parsley, half the parmesan and nutmeg. Season to taste.
3.Take 2 sheets of filo together (keep the remaining sheets covered with a clean, slightly damp tea towel to prevent them drying out), place on a work surface and spray with olive oil. Continue layering and spraying remaining pastry sheets.
4.Spoon spinach and ricotta mixture along one long edge of pastry. Roll up lengthways, folding the ends in. place seam side down on prepared tray.
5.Spray with olive oil and sprinkle with remaining parmesan. Bake for 30-35 minutes until crisp and golden. Slice strudel to serve. Accompany with salad.
