Fried onion rings and cornichons
Method
Slider with fried cornichons and onion rings
1.Combine mince and bacon in bowl. Mix well and season to taste. Shape into 6 even patties. Cover and chill until required.
2.In a large pan, heat oil on medium. Cook onion 4-5 minutes, stirring, until softened. Transfer to a plate.
3.Using same pan, cook patties 4 minutes on one side. Turn over and top evenly with cheese. Cover pan and cook for a further 4-5 minutes, until cooked through and cheese is melted. Keep warm.
4.Make onion rings and cornichons.
5.Spread both sides of buns with mayonnaise. Layer bun bases with spinach leaves, tomato, patties, extra sliced cornichons and cooked onion. Cover with lids and serve with fried onion rings and cornichons.

6.Heat oil in large saucepan until a cube of bread sizzles as soon as it is added (170°C). In a medium bowl, combine flours. Gradually whisk in combined soda water and vodka, until smooth. Place bowl inside a larger bowl filled with ice to chill. Dip onion rings into batter and lower into oil, frying 3-4 minutes, until golden. Drain on paper towel. Season to taste. Repeat with whole cornichons.
Cornichons are a type of pickle and can be found in all good supermarkets.
