Sausage and tomato penne

This Mediterranean pasta is packed with flavour, from salty fetta and olives to spicy kransky sausage and red chilli.

Ingredients

Method

1.Cook pasta in a large saucepan of boiling salted water for 10-12 minutes, following packet instructions. Drain well and return to pan.
2.Meanwhile, heat oil in a large frying pan on medium. Saute‚ capsicum, onion, garlic and chilli for 4-5 minutes until softened.
3.Add sausage and cook, stirring, for 2-3 minutes until lightly browned. Blend tomatoes, wine and olives into mixture and simmer for 2-3 minutes, stirring occasionally. Remove from heat and stir spinach through until it starts to wilt.
4.Toss sauce through pasta in pan and season to taste. Top with crumbled fetta. Accompany with garlic bread.

If liked, use beef sausages. Pan-fry first, then slice. For added speed, use bought chilli and garlic chopped or crushed. These keep well in their sealed containers in the fridge.
