1.Preheat oven to moderate, 180°C.
2.Wrap 1 piece of prosciutto around each chicken breast, securing with toothpicks.
3.Heat oil in a large frying pan on medium. Cook chicken for 2-3 minutes each side, until browned. Arrange on a baking tray. Bake for 10-15 minutes, until cooked through.
4.Meanwhile, add butter to same pan on low. Saute pears for 2-3 minutes, until lightly golden. Add maple syrup. Simmer for 8-10 minutes, until syrup thickens.
5.Serve chicken with pears, mashed potato and beans. Drizzle with syrup.
Browning the chicken breasts and then finishing them off in the oven helps keep them moist.
