Method
1.In a shallow dish, combine breadcrumbs, grated parmesan and parsley.
2.Dust pork in flour, shaking off excess. Dip into egg, then breadcrumb mixture, pressing firmly. Chill for 20 minutes.
3.Heat butter and oil in a large frying pan on medium. Cook pork for 3-4 minutes each side, until golden and cooked through. Drain on paper towel.
4.SALAD: Toss together rocket and pear. Drizzle combined oil and vinegar over. Top with shaved parmesan.
5.Serve pork with salad and a lemon wedge.
