Poached chicken, pear and fennel salad

Method

1.Bring a large, deep frying pan of water to the boil. Reduce heat to low. Add chicken, ensuring it’s covered. Simmer very gently 8-10 minutes. Remove from heat and rest in water 5 minutes. Remove chicken from water. Cool and slice.
2.In a salad bowl, toss fennel, lettuce, pear, walnuts and dill together.
3.To make dressing, combine mayonnaise, half cheese, cream and juice in a bowl. Mix well. Season to taste.
4.Just before serving, add dressing to salad, tossing gently. Serve salad topped with chicken and remaining cheese.

Poaching time will vary slightly depending on the thickness of chicken. If using smaller breasts, poach 6-8 minutes.
