Ingredients

Method

1.Place udon noodles in a medium bowl. Pour over boiling water to cover. Drain and keep warm.
2.Heat chicken stock and ginger in a saucepan on high. Reduce heat, add miso paste and simmer for 5 minutes, until miso dissolves.
3.Add chicken and mushrooms and simmer for 5 minutes, until chicken is cooked through. Add pak choy and cook for another minute, until wilted. Remove from heat, stir through noodles and serve.
