1.Heat half the oil in a medium frying pan over moderate heat. Add sausages; cook, turning, 10-12 minutes or until cooked. Transfer to a heatproof plate. Cover with foil; rest 5 minutes. Slice thickly.
2.Meanwhile, combine remaining oil, tomato, cucumber, onion, feta and oregano in a medium bowl. Season with salt and pepper.
3.To serve, place toast on serving plates. Top with rocket, sausage and salad mixture. Serve with lemon wedges; sprinkle with oregano leaves.
