This bacon and cheese tart is perfect for anyone who loves a seriously savoury flavour to their food – using a sharp cheddar in this recipe will tantalise the tastebuds.

Method

1.

Preheat oven to 190°C. Pop in a tray to heat. Line a tart tin with pastry and place in the fridge to chill while you make the filling.

2.

Sauté the bacon and onion in olive oil until the onions begin to soften. Set aside.

3.

Whisk together the eggs, crème fraîche and cream, then stir in the cheeses and chives.

4.

Spread the cooked bacon and onions over the pastry base. Pour over the egg mix.

5.

Bake for 35-40 minutes until just set and beginning to brown on top.

6.

Serve warm or cold with salad.

Nici used a gorgonzola style cheese for this recipe.
