Making this zucchini slice will keep you on top of your food prep game for the week! This is perfect as a light lunch on the weekend too, but we love the versatility of this slice – pop it in to school lunchboxes and it makes for a healthy, filling lunch. This recipe is also a great way to use up the odds and ends of cheese and ham lurkingin your fridge!

Preheat oven to 180°C (160°C fan-forced).

In a large bowl, combine zucchini, onion, bacon, cheese, sifted flour, oil, and lightly beaten eggs. Season with salt and pepper.

Pour into a well greased lamington tin (16cm x 26cm).

4.

Bake for about 30-40 minutes, or until well browned.

5.

Cut into squares and garnish with parley, if desired, before serving.
