1.Using a meat mallet or rolling pin, pound steaks to 3mm thick.
2.Rub halved garlic over steaks.
3.In a bowl, combine sundried tomatoes and olives. Spoon 1 tablespoon of mixture on one end of each steak. Roll from short end to enclose filling; secure with string.
4.Heat half oil in frying pan on high. Brown beef; remove from pan.
5.Heat remaining oil in same pan on medium. Saute crushed garlic 15 seconds. Stir in diced tomatoes, water, herbs and sugar; bring to boil.
6.Return beef to pan. Reduce heat to low; simmer, covered, 30-35 minutes, until tender. Remove from heat.
7.Stir spinach through. Remove string from beef. Serve with bread.
