Gazpacho
Coriander salsa

Method

1.Combine all ingredients in a food processor or blender.
2.Pulse until well chopped. Then process until smooth. Season to taste. Cover; chill until ready to serve.
3.To make coriander salsa, combine all ingredients in a small bowl. Season to taste.
4.Serve soup chilled in shot glasses and topped with coriander salsa.

You need about 1/2 cup ciabatta bread chunks.
