Method

1.Place flour, baking powder and salt together in mixing bowl and tip into base of food processor. Add butter to dry ingredients and process to combine. With motor running, gradually pour water down spout.
2.Turn out dough onto lightly floured surface and knead for a couple of minutes until smooth and elastic. Rub surface of dough with oil, cover with cling wrap and rest for 10 minutes.
3.Preheat frying pan over medium heat.
4.Divide mixture into quarters, then roll 6 balls from each quarter to make 24 tortillas.
5.Roll out each ball with rolling pin between 2 sheets of baking paper to about 18cm diameter (use new sheets once paper gets crinkled). Cook for 1 minute on first side, then 45-60 seconds on second side while continuing to roll next tortillas. Repeat with remaining dough.
6.Stack cooked tortillas on serving plate, cover with cling wrap and refrigerate until ready to use. Tortillas will last for up to two days covered in the fridge. Reheat in microwave until warm.
