Fish burgers

If you love a burger, but would like to try something a bit different, then give our mouth-watering Fish burgers a go. Baked potato slices give them an extra flavour edge.

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Lightly grease and line a baking tray.
2.In a food processor, blend fish, coriander and rind until a coarse paste forms. Shape into four patties. Chill.
3.Place sliced potato on prepared tray. Lightly spray with cooking oil spray. Season to taste. Bake for 20 minutes, turning halfway through cooking, until golden.
4.Heat oil in a frying pan on low heat. Cook patties for 3-5 minutes each side or until cooked through.
5.Combine mayonnaise and chives. Spread over base of each roll. Top with lettuce leaves, fish patties and potato slices. Add roll tops to serve.

Fish can be roughly chopped in a food processor, but don’t process it until it’s smooth.
