Egg and bacon pies with chips

Method

1.Preheat oven to 200°C/180°C fan forced. Grease 4 holes of a (3/4-cup) Texas muffin tray. Place chips on a baking tray. Bake for 30 minutes or until browned and cooked.
2.Meanwhile. heat a medium frying pan over moderately high heat. Add bacon; cook and stir for 3-4 minutes or until crisp. Transfer to a medium heatproof bowl. Add capsicum to bacon; stir to combine. Whisk eggs, cream and cheese in a large jug. Season with salt and pepper.
3.Cut each filo sheet into quarters (rectangles). For each pie, stack 4 pieces filo to create a star shape. brushing between layers with butter. Line prepared holes with pastry. Sprinkle a quarter of the breadcrumbs over the base. Top with bacon mixture. Pour egg mixture over bacon. Scrunch edges of pastry to form a border. Bake for 15-18 minutes or until set and golden. Stand pies in pan for 5 minutes; transfer to plates.

Make one 20cm pie. Cut filo sheets in half crosswise; stack in a star shape; line dish. Bake pie for 25-30 minutes. Pizza cheese is a combination of mozzarella, tasty and parmesan.
